Tasting Notes
In the glass the wine has pale colors of light greenish-gold. The nose offers highly aromatic and exotic tropical expressions of banana, green apple, and hints of lemongrass, and tarragon. In the mouth green apple, musk melon, and kiwi attack with both flint, moderate acidity, and a smooth, refreshing finish. Light lees contact while aging for four months in neutral French oak barrels improved both the mouth feel and texture.
Vineyard Notes
Luna Llena (full moon in Spanish) is our homage to this celestial orb and its subtle effect on our Biodynamically grown grapes. With the 2019 harvest, we were blessed with a mild, even-growing season and excellent fruit set. Generous rainfall in May and perfect yields gave us the opportunity to dial in the flavor profiles, acidity, and ripeness of our individual blocks. Our inspiration was a leaner more ‘Sancerre-like’ style to fully express our Biodynamic farming and unique terroir. We exclusively used our Entav 378 clone, harvested on the full moon, which offers minerality and pleasing notes of citrus zest. To preserve its vibrant fruit flavors, we fermented in stainless-steel at cool temperatures with a select yeast strain to enhance aromatics. Post fermentation, the wine spent four months in neutral oak barrels with light lees contact to improve mouth feel.
